How Long Do Cashews Last? The Proper Storage Methods

How long do cashews last?

There is no single fixed answer, because shelf life depends directly on the storage method.

Generally:

  • Roasted or dried cashews – sealed and properly stored: 6 – 12 months
  • Opened cashews with poor storage: Quality drops within 2 – 4 weeks
  • Hot, humid environments, sunlight, or unsealed packaging: may spoil in just a few days.

Cashews usually do not mold immediately, but they often become rancid, soft, and lose flavor long before they are fully “spoiled”.

 

When do cashews spoil easily?

Cashews are naturally high in oil. When this oil is exposed to air, moisture, and high temperatures, oxidation occurs causing rancid oil smell, harsh aftertaste, and loss of crispness. This is why many people mistakenly think: ” The rancid smell is caused by improper roasting.” In reality, around 80% of cases are due to incorrect storage after opening.

 

Proper cashew storage methods (Very Important)

1. Always store in airtight packaging

  • Use thick zip-lock bags, vacuum-sealed bags, or airtight containers.
  • Seal tightly after every opening
  • Avoid thin plastic bags or open containers

2. Avoid sunlight and high temperatures

  • Do not place near stoves, windows, or inside car trunks.
  • Ideal storage temperatures: 20 – 25 degrees Celsius
  • High heat = faster oxidation = cashews spoil faster.

3. Avoid moisture – cashews’ biggest enemy

  • Do not store near humid areas.
  • Do not place in the refrigerator unless completely sealed.
  • Avoid opening packages in humid environment.

4. Should cashews be stored in the refrigerator?

Yes – but only if done correctly.

✔ Store in the refrigerator only when

  • Completely sealed (preferably vacuum-sealed)
  • Not opened frequently

❌ Otherwise:

  • Cashews will absorb moisture
  • Refrigerator odors will affect the taste

 

Sign that cashews have lost quality

  • Old oil or slightly rancid smell
  • Less creamy, with a harsh aftertaste
  • Soft texture, no “crack” sound when broken
